Marinated Leeks

In Season in the UK from September to March – this is an easy salad dressing to make the day before you need it.

For 4-6 as a salad dressing

Clean the leeks well – they can be very dirty and gritty. Remove any damaged outer skin, cut off the root at the base and the darker green tough leaves at the top.

4 medium leeks, cleaned as above and finely sliced into circles

Zest and juice of 1 medium lemon

2 tsp caster sugar

4 tbsp olive oil

½ tsp salt flakes

Put the leeks in a bowl and stir in the lemon zest and juice, caster sugar, olive oil and salt flakes.

Cover the bowl and leave to marinate in the fridge overnight.

Use the marinated leeks to gently toss through some salad leaves, rocket is good, and eat it with some simply cooked fish or meat.
